For hours at a time a streaming tablet pulls a camera, encodes video, holds the Wi-Fi and keeps charging — that is a question of processor and memory, not of the Android version on the box. Buy the Wi-Fi version, check the spec sheet says USB-C with USB host (OTG), and when two cost the same, take the one with more RAM. Android only: iPads and Windows tablets are not supported.
Any current entry-level chip, 4 GB of RAM, a screen of 10 inches or more.

You can stream with the camera already in the tablet; a separate one lets the tablet hang within reach (why that matters). If you buy one, it must be UVC — plug-and-play, no driver. It hangs behind the reds or the rack, 1.8 m up or higher, and has to see the whole bed: take 78° or wider, 90° if it hangs close to the table.

4K only pays off with an upload to match and a tablet from the show-table list with a USB 3 port. For most clubs 1080p is the right answer. An RTSP or ONVIF IP camera on the club network works too, with nothing to plug in.
A tablet has one USB-C port. A hub with power pass-through gives it the camera and the charger at the same time, which is what a table live all evening needs. Not needed if the tablet films with its own camera.

Plug the charger into the hub first, then the hub into the tablet. Several tablets only take pass-through power in that order — it is the most common reason a table "stops charging while streaming". Use a USB-C charger at least as strong as the tablet's own: the hub keeps a few watts for itself.
